Ingredients
  

  • 1 1/2 cups plain flour
  • 3/4 cup caster sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup plant milk
  • 1/3 cup vegetable oil
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest

Glaze

  • 1/2 cup icing sugar
  • 1–2 tbsp lemon juice

Instructions
 

  • Preheat oven to 180C (350F).
  • Mix dry ingredients in one bowl.
  • Whisk wet ingredients in another bowl.
  • Combine and pour into lined loaf tin.
  • Bake for 40 minutes until golden.
  • Mix glaze and drizzle over cooled cake.

Notes

Store in an airtight container for 3 days.
