Ingredients
  

  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic, minced
  • 2 cans chopped tomatoes
  • 2 cups vegetable broth
  • 1/2 cup coconut milk
  • 1/4 cup fresh basil, chopped
  • Salt & pepper, to taste

Instructions
 

  • Sauté onion and garlic in olive oil until fragrant.
  • Add tomatoes, broth, salt, and pepper. Simmer 15 minutes.
  • Stir in coconut milk and basil, then blend until smooth.
  • Serve hot with garlic bread.
