- 1 tbsp olive oil
- 1 onion chopped
- 2 cloves garlic, minced
- 2 cans chopped tomatoes
- 2 cups vegetable broth
- 1/2 cup coconut milk
- 1/4 cup fresh basil, chopped
- Salt & pepper, to taste
Sauté onion and garlic in olive oil until fragrant.
Add tomatoes, broth, salt, and pepper. Simmer 15 minutes.
Stir in coconut milk and basil, then blend until smooth.
Serve hot with garlic bread.
