Ingredients
  

Curry Base

  • 1 tbsp coconut oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp curry powder
  • 1 tsp ground cumin

Main Ingredients

  • 1 cup dried red lentils rinsed
  • 1 can coconut milk full-fat
  • 2 cups vegetable broth
  • salt and pepper to taste

Instructions
 

  • Heat coconut oil in a saucepan over medium heat. Add onion, garlic, and ginger, cooking until fragrant.
  • Stir in curry powder and cumin, cooking for 1 minute.
  • Add lentils, coconut milk, and broth. Bring to a boil, then reduce to simmer for 25–30 minutes until lentils are tender.
  • Season with salt and pepper to taste. Serve hot with rice or naan.

Notes

Leftovers keep well in the fridge for up to 4 days and freeze beautifully.
