Ingredients
- 1 large cauliflower, cut into medium florets
- 1 l boiling water (for blanching)
- 1 cup plain flour
- 1 cup unsweetened plant milk
- 1 tbsp cornflour (cornstarch)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt & pepper, to taste
- 1½ cups panko breadcrumbs
- 2 tbsp rapeseed oil (optional spray)
- 1/3 cup ketchup
- 1/3 cup sriracha
- 1/3 cup sweet chilli sauce
- 1 tbsp sesame seeds (optional garnish)
- 2 tbsp spring onions, finely sliced (garnish)
Instructions
- Blanch florets in boiling water 2 minutes; drain and pat dry.
- Whisk flour, plant milk, cornflour, garlic powder, smoked paprika, salt & pepper into a smooth batter.
- Dip florets in flour (light dusting), then batter, then panko to coat.
- Air fry at 200°C for 14–18 minutes, turning halfway; lightly oil-spray for extra crunch.
- Stir ketchup, sriracha, and sweet chilli to make sauce; toss hot wings to coat. Garnish with sesame and spring onions.
